The Paleo Foundation has published the 2027 edition of the KETO Certified Standards. It replaces the 2024 edition. Read the 2027 KETO Certified Standards (PDF).
What changed
- Condiment limits are now defined per 0.5 oz (14.175 g) of serving weight: 2g net carbohydrates, or 3g with the Section 2.1 allowance, scaled to serving weight. For example, a 29 g serving is limited to 4.09g.
- The 1g condiment allowance is clarified. It applies once per 0.5 oz, so a qualifying condiment is limited to 3g net carbohydrates per 0.5 oz, scaled to its serving weight.
- A new section, Determining condiment eligibility, says that when a declared net carbohydrate value is within 0.5g of the limit, eligibility is confirmed by HPAEC-PAD, or an equivalent method, performed by an ISO accredited lab, and the lab result decides.
What licensees should do
Licensees with condiments near the limit may need lab confirmation. If you have questions about how the 2027 standards apply to your products, contact the Paleo Foundation.
